How to store Sawa-Wasabi
Place the wasabi rhizome in a glas. Fill up the glas with water, so that the water covers only the rhizome and not the stems. Store the rhizome in the coolest place of the refrigerator. Renew the water every day.
Since you grind a rhizome from the top, you have to cut of the stems. You can store these partially grinded wasabi completely covered by water. Use the rhizome within a month. When stored wasabi ripens a bit. This means that freshly harvested wasabi does not yet develop the typical aroma as a wasabi rhizome which has been stored for one or two weeks.
